carrot salad

I'm curious does anyone here eat rays carrot salad and how do you prepare it. I've tried it by grating a carrot down, mixing it with half a spoon of coconut oil and a cap of apple cider vinegar to sharper taste. Any suggestions on improving it would be appreciated 🙂
 
I grate and thoroughly rinsed the carrot until the water runs clear.

Salt, a little vinegar and coconut oil or olive oil.

I've eaten it with little mango when I have some and sultanas if I fancy a change.

I also just put some without dressing on the plate with a meal.
 
I used to, but switched to bamboo shoots + salt + vinegar. Trying to avoid beta carotene as much as possible.
