Itchy dog

Hey!
I’m stomped and was hoping to get some thoughts from this lovely community.

6 year old active, & otherwise healthy, GSD.
Unaltered female. Since she was little, her weak area is itchy skin. A couple of times a year she starts scratching like crazy.
I have dealt with this by using an anti microbial shampoo (Zymox), 2-3 times a week for 3-4 weeks or so. I live in western WA state, and it’s mild and moist here. So microbes like it. The shampoo usually takes care of it, and then she is fine. Shiny coat.

Anyway- this time it did not work.
In fact, she developed a deeper skin infection, with seeping and pus. I was horrified! Tried to get her to the vet and everyone is booked (wth?!). In fact, I finally got an appt which is on the 30th, with a vet 1.5 hours away. Since I couldn’t get in right away, I had to do something. I put her on olive leaf extract and grape seed extract. Kept washing her with Zymox, and used Solban on the worst areas. It cleared up surprisingly quickly. However, the underlying itchiness is still there. I need to fix it.
I have been making her food to keep her off commercial food.
This is what I have done so far:

-Switched her food to ground whole raw rabbit. Add a tea made with fresh ginger root, kale or cilantro. Salt, honey and cooked apples. Egg shell calcium. B3, vitamin K.
A Benadryl & and an aspirin morning and night. Progest-E at night. She gets animal based enzymes with each meal.
She is still itchy.

Today I gave her 2/3 cup of strong coffee with a good amount of home made dulce de leche a hour before dinner. Before bed she got milk with sugar.

Any insights? I don’t have high hopes for the vet on the 30th, but we are still going. (Heck- I had to wait a month to even get in!) The severe infection is gone, but I still need to solve the underlying issue.

Sounds like allergic reaction to something or some vitamin deficiency. Even if you drastically change her diet (for the better) it takes time to calm it down. I would not give her coffee. I read somewhere dogs can be harmed by coffee.
Can you try to switch her to high quality raw milk cottage cheese? My dog could kill for a home made cottage cheese. Avoid commercial verities, since they all contain some sort of thickening agents , such as carrageenan. Plus some indigestible fiber for stool forming. I would run this type of diet for 2-3 weeks and see if it helps.
